Red Beans & Rice

  • 1 lb. kidney beans (don’t soak, do rinse)
  • 1 chopped bell pepper
  • 1 chopped onion
  • 2-3 bay leaves
  • red pepper, pepper, salt
  • smoked sausage

Put first 7 ingredients into large pot with 6 cups water.  Bring to boil.  Simmer covered for 1 hour, 45 minutes.  Thinly slice sausage, and add to pot.  Cook 30 minutes.  15 minutes before serving, take some beans out of the pot, mash, and return to the pot to thicken sauce.  Serve over hot, cooked rice.
