Roasted Tenderloin

 

Whole beef tenderloin (I buy mine at Sam's Club)

Extra virgin olive oil

Salt, pepper, garlic powder

Rub tenderloin with olive oil and seasonings.  Place on roasting pan with rack (something raised so fat can drip to bottom - I use the pan that came with the oven). Insert meat thermometer 

Preheat oven to 500 degrees F.  When oven reaches 500F, put the meat in for 10 minutes.  Do not open oven door.  Then turn oven down to 350F and cook 15, 20, 30 minutes more.  This is where Charlie and I get into squabbles.  He likes the meat thermometer to reach 120, and I don't because once the meat was not rare enough when it reached that temp.  Anyway, if you want it rare, do not let the thermometer go above 120F. 

After removing meat from oven, let it rest 10 minutes before slicing.

Serve with horseradish sauce, if desired.
