  • Crawfish Pie

    Saute onions, garlic, bell peppers, celery, in butter until limp.  Add soup, tomato sauce, crawfish, and parsley and cook slowly for 10 minutes.  Then turn off heat.  Add bread crumbs, salt, pepper, egg and milk and mix well.  Put into pie shells.  Bake at 350 for 35 to 40 minutes.  Makes 16 to 18 pies.…

  • French Toast

    In a mixing bowl beat 4 eggs.  Mix in milk to a runny consistency.  Add cinnamon to taste.  Completely submerge texas toast in mixture and soak through.  Cook to golden brown in skillet.  Butter bread. (Note: I often scramble the remaining eggs) Serves 2 (about 4 slices) (Lee Anne)

    Slice French bread into 20 slices, 1-inch thick each. (Use any extra bread for garlic toast or bread crumbs).   • Brunch Eggs

    Beat eggs, add other ingredients, and pour into greased 13x9x2” pyrex casserole dish.  Bake at 350 for one hour (check to make sure center is set).  Note:  Don’t pour melted butter in bubbling hot, or it will cook the eggs. Serves 12 Note:  Recipe may be halved. (Lee)

  • Grillades

    Salt and pepper round steak.  In a heavy Dutch oven, cook bacon.  Remove.  Brown round steak in drippings.  Remove meat.  Add flour to drippings, stirring constantly.  Add vegetables, (except tomatoes),  and cook until wilted.  Add tomatoes (just enough to add a pink color – mixture should retain its brown color).  Add seasonings and red wine. …

  • Hash Brown Casserole

    In a skillet, cook the sausage until browned.  Drain well.  In a large mixing bowl, combine the cheese, chicken soup, sour cream, French onion dip, chopped onion, bell peppers, salt and pepper.  Fold in hash brown potatoes.  Spread ½ of the hash brown mixture over bottom of a 9 x 13-inch greased baking dish.  Spread…

  • Sausage & Grits

    Cook grits according to package directions.  As soon as the grits are done, take and dump them in a warm crock pot with other ingredients and let sit for about 3-5 minutes.  Then stir. You can cook the sausage the night before and refrigerate it.  Then it takes only about 10 minutes to prepare. (Peggi)

  • Garlic Grits

    Cook grits according to directions.  Cook until done, but not dry (about 5 minutes).  Mix all other ingredients, except paprika) together with grits.  Pour into well-greased 3-qt. casserole.  Refrigerate overnight.  Sprinkle paprika on top.  Bake, uncovered, 1 hour at 300 or until firm.  Serves 18.   • Peabody Muffins
