Potato Casserole

  • 1 32 oz. shredded frozen potatoes
  • 1 cup melted butter
  • 1 can cream of chicken soup
  • 12 oz. grated cheddar cheese
  • 18 oz. sour cream
  • ½ small chopped onions
  • 1 bell pepper
  • 2 cups crushed cornflakes
  • Paprika
  • Ground Red Pepper
  • 1 tsp. salt

Place thawed potatoes in a 9×13 casserole dish.  Mix ½ cup butter, soup, cheese, sour cream, onion, bell pepper, salt, pinch of paprika, and pinch of red pepper.  Pour mix over potatoes.  Mix ½ cup butter with crushed corn flakes, and spread over top.  Bake at 350º for 45 minutes.
