Spinach Salad with Vermouth Dressing

  • Spinach
  • Boiled eggs, sliced
  • Capers
  • Fresh mushrooms, sliced
  • Green onions, sliced (optional)
  • Bacon, diced (or cut with scissors)
  • (Ingredients are optional and size depends on servings and taste)

Dressing:

  • ¼ lemon juice
  • ¼ cups dry vermouth
  • 2 tsp. dry mustard
  • 2 tsp. tarragon (optional)
  • 1 tsp. black pepper
  • 1 clove pressed garlic
  • 2 tsp salt
  • ¾ cups olive oil
  • ¾ cups vegetable oil

Mix dressing ingredients together.  Toss ingredients together.
