Microwave Roux

  • Vegetable oil
  • Flour

(Amounts vary depending on recipe)

Mix grease and flour in large glass measuring cup.  Microwave on high 3½ minutes.  Stir.  Continue microwaving, stirring every 30 seconds until desired color.  (Be very careful not to burn roux). Warning: Use pot holder to handle measuring cup
