Baked Vanilla Custard

  • 3 eggs, slightly beaten
  • ¼ cup sugar
  • ¼ tsp. salt
  • ½ to 1 tsp. vanilla extract
  • 2 cups milk, scalded
  • Ground nutmeg

Combine 1st 4 ingredients, beating well.  Gradually add milk, stirring constantly.  Pour into 6 custard cups.  Sprinkle with nutmeg. 

Place custard cups in a 13x9x2-inch baking pan.  Pour hot water into pan to a depth of 1 inch.

Bake at 325 for 40-45 minutes or until knife inserted halfway between center and edes of custard cups comes out clean.  Remove cups and cool.  Yields 6 servings.
