Casey’s Caramel Apple Pie

Ingredients for pie:
1 deep dish frozen pie crust
½ cup of sugar
3 tablespoons of al purpose flour
1 teaspoon of ground cinnamon
1/8 teaspoon of salt
6 cups of peeled and thinly sliced Golden Delicious and Fuji apples (I buy 3 Golden Delicious, and 3 Fuji apples and it comes to 6 cups or a little more)
½ cup of chopped pecans
Caramel topping

Ingredients for topping:
1 cup of brown sugar, packed
½ cup of all purpose flour
1 package of maple and brown sugar oatmeal
1/3 cup of butter, melted until soft enough to mix in

Instructions for topping:
In a medium size bowl, mix brown sugar, flour, and oatmeal.  Mix in melted butter until crumbly and then set aside.

Instructions for pie:
Preheat oven to 375 degrees.  In a LARGE bowl mix sugar, flour, cinnamon, and salt.  Add apples and toss until they are coated.  Put apple mixture in pie crust and spoon crumb topping on the top of the pie.  Put pie on a cookie sheet with a FOIL RING** around the edges and bake at 375 degrees for 25 min. then remove the foil ring and bake for another 25-30 min.  Remove, and sprinkle with pecans. Let cool on wire rack.  Add caramel topping before serving.
** take a large piece of foil and fold over a few times to make a long rectangle to wrap around the pie. This keeps the crust from burning. Call me about this if you want me to explain.
