Casey's Chocolate Pie

INGREDIENTS

  • 9-inch baked Pastry Shell
  • 1 cup sugar
  • 3 tablespoons cornstarch
  • 1/8 teaspoon salt
  • 2 1/2 cups milk
  • 1 large egg
  • 2 large egg yolks
  • 4 ounces unsweetened chocolate, finely chopped
  • 2 tablespoons unsalted butter
  • 2 teaspoons vanilla extract
  • 1 cup heavy cream ***
  • 1 tablespoon confectioners' sugar ***
  • chocolate shavings or chocolate sprinkles for garnish on top
DIRECTIONS
Combine first 6 ingredients in a medium saucepan, whisking well. Bring to a boil over medium heat, whisk constantly for 8 minutes. Remove from heat.

Stir in chocolate until smooth. Stir in butter and vanilla. Pour into pastry shell. Cover top of tart with wax paper. Chill at least 3 hours.

Whip cream and confectioner's sugar until stiff. Spoon on top of tart. Garnish top with chocolate shavings or chocolate sprinkles
***I used cool whip on top instead of making whipped cream
