Marinated Beets

Use fresh beets if at all possible, although canned beets are still very good.  If using fresh beets, boil in salted water, peel (peels come off easily after beets have cooked), and quarter.  Place in bowl.  If using canned beets, place whole beets (drained and rinsed) in bowl.  Sprinkle liberally with salt, pepper, garlic powder, and dill.  Add a little sugar if desired.  Pour over a mixture of ½ cider vinegar and ½ water.  Use however much it takes to cover the beets.  Then drizzle 1 to 2 Tbsp. salad oil over mixture.  Cover and refrigerate for 24 hours.

Note:  You may add sliced onions if desired.
